Garlic (lehsun) achar is a flavorful, tangy, and spicy pickle that enhances the taste of meals. Here’s a step-by-step recipe to make it at home:


Ingredients:

  • Garlic cloves: 250 grams (peeled)
  • Mustard oil: 1/2 cup
  • Lemon juice: 3 tablespoons
  • Salt: 1 tablespoon (adjust to taste)
  • Turmeric powder: 1 teaspoon
  • Red chili powder: 2 teaspoons (adjust to taste)
  • Mustard seeds (rai): 1 tablespoon (coarsely ground)
  • Fenugreek seeds (methi dana): 1 teaspoon
  • Fennel seeds (saunf): 1 tablespoon
  • Asafoetida (hing): A pinch
  • Vinegar: 2 tablespoons (optional, for longer shelf life)

Instructions:

1. Prepare the Garlic:

  1. Peel the garlic cloves and ensure they are clean and dry.
  2. If the cloves are large, you can cut them into halves or leave them whole as preferred.

2. Roast the Spices:

  1. In a dry pan, roast mustard seeds, fenugreek seeds, and fennel seeds lightly until aromatic.
  2. Let the spices cool, then coarsely grind them.

3. Heat the Mustard Oil:

  1. Heat mustard oil in a pan until it starts to smoke, then let it cool slightly.
  2. Add asafoetida and turmeric powder to the oil and stir well.

4. Mix the Pickle:

  1. In a large mixing bowl, combine the garlic cloves, roasted spice mixture, red chili powder, and salt.
  2. Pour the cooled mustard oil over the garlic mixture and toss well.
  3. Add lemon juice and mix thoroughly. If using vinegar, add it now for extra tanginess and preservation.

5. Store the Pickle:

  1. Transfer the pickle to a clean, sterilized glass jar.
  2. Press the garlic cloves down to eliminate air gaps and ensure they are submerged in the oil and spices.
  3. Pour extra oil on top to create a protective layer.

6. Allow the Pickle to Mature:

  • Seal the jar tightly and leave it in a warm, dry place for 4-5 days to mature.
  • Shake the jar daily to mix the flavors and coat the garlic evenly.

Storage and Serving:

  • Store the garlic pickle in a cool, dry place or refrigerate for longer shelf life.
  • Serve with parathas, rice, or any Indian meal for a tangy, spicy boost of flavor.
